Cinnamon rolls

This is not dairy free and does have some corn it it. Not enough to mess with my system but is 100% gluten free. 


One package of PILLSBURY gluten free pizza dough. 
3T butter (melted)
Sugar and cinnamon to coat

Preheat oven to 400. 
Roll out the dough(it is sticky) -I had to use oat flour to help with the stickiness
Spread the butter all over (you want the whole top covered)
Add sugar and cinnamon want it to be even (sound turn into a paste) press into dough gently.
Roll up the dough-remember it is sticky
Cut up into pieces 
Place on cookie sheet
Bake for 10 minutes

Now you have an option 

1) you can glaze with powdered sugar milk mixture (I have never ever liked this)
2) cream cheese frosting (it melts just like it is suppose to)-YUM

Two yummy allergen friendly meals. 

I made carmalized asparagus, beef and rice.

Basically asparagus and beef cooked in butter and raw sugar, over rice.
Really yummy!

Other one. I really wanted hummus. But I can't have normal chips or corn tortillas. I got white bean chips. Yummy! 

I also forgot to take a picture but I had really yummy roasted veggies. Sweet potato and Brussel sprouts. Yes I like Brussel sprouts.

More Exploring

This week I was able to drive to Idaho Falls and go to a natural food grocery store. So cool! Majority of stuff there I could eat. Normally I walk around a grocery store and just avoid most aisles.

Today I found gluten free and mostly corn free orange sauce. My favorite food of all time is Orange beef. It is an Asian dish with breaded beef in a spicy orange sauce. I haven't had this for obvious reasons for 2 years. Today though I found that sauce and was so excited!


So I made this yummy noodle, pork, and mushroom dish.

I also found some pretty good tasting animal crackers. Gluten free stuff can be a hit and miss. Somethings don't taste bad others are awful. Trying to find a corn free cookie made it so much harder though. The main ingredient in a lot of gluten free foods is a corn based product. They have some corn in them but it is not one of the main ingredients.


I also found chips that are a bean product. Most chips are made out of corn (corn chips) or are fried/seasoned in stuff that contains corn. So I was excited to find these chips, haven't tried them yet though.

At my local Walmart I was pretty happy with my findings there too!

I was able to find a gluten and corn free fruit snack. I love fruit snacks but they are just another processed thing packed full of preservatives aka corn....


I also tried these peanut-butter and jelly sandwich things. They are actually quite good.


I love juice. It is bad... I can only drink 100% juices though. Once again if they aren't 100% normally they have corn syrup (poison to me.) I found a 100% juice smoothie. It was actually something I drank periodically in high school. Yummy mango flavored one.

More exploring

This week I ate more sweet potatoes. Who knew they would become my best friend?!? I have found one thing in particular I like about them. They fill me up. A lot of food I eat and then an hour later I am hungry again. I think it is because I can't really have any grains.... 

This week I found three really cool things. I found these root vegetable chips. Now that sounds nasty, but they really aren't. The have sweet potatoes, parsnips, taro, and other root veggies. But they are corn,gluten, and dairy free so I am not complaining.

I also  was able to find an almond based "ice cream." It is defiantly different. I don't eat that much at once. But it is nice to have something cold and chocolately like ice cream. 

Finally I was able to find corn free juice. That sounds funny I know... But most of them have corn syrup or lots of preservatives. This one is a natural juice. So it is water, juice, and beet sugar. :)

Sweet Potato

This week I was reminded how much I love sweet potato. I didn't get it much as a kid because my dad didn't like it. But now that I am at college why not?!?
I have found I like it two ways:

Sweet:
Cook the sweet potato takes about an hour at 350
I peel the skin off afterwards(it comes off super easy)
T butter
T honey
t cinnamon 

Savory:
I make this one like it is a normal potato

Butter,cheese, and sour cream to your liking :)

I am not THAT intolerant.....

Sometimes I test myself. I am not really THAT intolerant am I?!? Um yes Becca you are. 

Last weekend for whatever reason I decided to try some milk. I knew what happened if I drank milk but did it anyways. Yep of course within 20 minutes I reacted to it. This is why I drink lactose free milk... Ugh. 
This week I wanted Hot and Sour soup so bad. I guess it is a form of comfort food for me. So I went to a restraunt and got gluten free Hot and Sour soup. Yeah that doesn't work either. It had too much corn. I don't know what exactly was in it probably corn starch. I woke up the next morning SO sick. Well I am officially still intolerante to corn and milk oh well.

Peanut Butter Rice

Another one of my favorite foods is peanut butter rice. 
1/2 cup rice cooked
1/4 cup peanut butter 
1 T honey
1 T soy sauce
Dash of ginger

In the microwave heat up 1/4 cup peanut butter, 1 T honey, 1 T soy sauce, and a dash of ginger powder. I let those warm/melt. Sometimes you have to add a little bit of water. It took me about 1 1/2 minutes. I mix the rice into the peanut butter sauce. Yum! :)
